Collection: White Tea
Traditionally, white teas are teas with the least amount of processing. They are picked and then sun-dried, and from there the teas are either packaged as loose leaves, or pressed into cakes.
The saying about white tea goes in China, "1 year is tea, 3 years is medicine, and 7 years is treasure" - this adage comes from the flavor development that comes from aging White tea. With pressed white teas, there will often be a vintage year with them, to indicate what stage of the process they are in.
New white tea is clean, crisp, and water-like; as it ages, it develops notes of dried fruit, chocolate, and honey.
