Collection: Sheng Pu'er

Sheng Pu'er is tea from the Pu'er region that has not been put through the oxidation or post-fermentation process. It has been prepared in a manner such that it can be aged, to develop complex flavors over many years. It can also be served at any time, for a delightfully floral astringency in the realm of white wine.

Like green tea, it can go bitter very easily - it can handle boiling water, but if the steeps are coming out too bitter, shift to a lower temperature, closer to 180°F/82°C.
