Houjicha (焙じ茶) is a tea from Japan made by roasting green tea over gentle heat in a clay pot. The heat makes the tea brittle, which is why this is actually the only tea currently in the catalog that is not whole-leaf. If you are doing gong fu cha with this tea, you will need a strainer.
Hot Tasting Notes: "Smells like chocolate, tastes like honey" is my catchphrase for this tea at markets and fairs. This tea tastes of lightly burnt caramel and honey; the roasting process eliminates the astringency that green tea normally has, replacing it with a smooth sweetness that hits the back of your throat.
