Gāo Shān (高山) means "high mountain" in Mandarin; in the context of Taiwanese tea, it refers to tea that is grown at an altitude of 1000m above sea level or higher. High Mountain tea leaves can be made into various teas, but is primarily made into oolongs of low oxidation, leaving them green and vibrant.
The color of the unfolded leaves made me think of Chartreuse liqueur, and after some research, the tea liquor has a color similar to the original tint of the famous French drink.
This tea has a lovely tanginess common in low-oxidation oolongs, with flavors of lightly sweet leafy greens, and an unoily thickness that sits at the sides of the back of your tongue. The wet leaves smell of flower stems and peas, and when dry, the aroma is that of vanilla yogurt and warm coconut milk.
